Courgette and Mint Frittata

I’m about to embark on a serious health kick, specifically Protein Card’s 12 Week Physique programme. My aim is to follow the programme’s diet and training plan to the letter for the next 12 weeks in order to reach peak physique. I’ll take before and after shots and there’s weekly weigh-ins and measurements to take to track progress. It’s not going to be easy but I’m pretty driven so I’m sure it’ll be doable plus there’s a good bunch of motivated people taking part.

The key challenge will be sticking to the personalised eating plan the guys and girls have developed for me. I’m on a strict 2635kcals a day. I’ve never been one for tracking kcals or macros, but I’m willing to give it a go – it’s only 12 weeks and I’m sure the end result will be worth it.

After I’ve necked my morning supplements my first meal is 5 whole eggs. There’s no way I could eat 5 boiled, fried or poached eggs in one go – it wouldn’t happen and I love my eggs. To help me get them in I’ve createdΒ this delicious frittata.
